The pizza dough is bought from a gluten-free bakery in the village of Valeggio, but they bake the pizzas in the single oven, though they use rice flour when stretching them. Handmade gluten-free tortellini on the menu are a must-have in Valeggio

They've changed the pizza dough and it's very good and they also have excellent tortellini!
