They haven't been AIC since 2017, you can still order gluten-free fish dishes and they'll take extra care. The prices are a bit excessive for what they serve. I wouldn't recommend it, but at the same time it's one of the few options here in Monopoli

Nice little restaurant with excellent food, staff attentive and scrupulous toward those who need extra care because they're intolerant. On Saturday and Sunday they told us they don't do the gluten-free fried fish (they're AIC certified) to avoid contamination. Seriousness and professionalism! We will definitely be back as soon as possible! Generous portions with very good value for money.
