I also had the unpleasant surprise of finding nothing for breakfast because the pastry chef had quit. luckily there are excellent alternatives in the city.

this morning, looking for bars in Palermo for celiacs for breakfast, Extro cafè came up. when my boyfriend and I went there, they told us they don't do breakfast for celiacs, only lunch and dinner. I gave one star because in the end we got up and left without getting anything, so I couldn't evaluate anything.
