They use the same oven where they cook the pizza with gluten. Crazy stuff!!!

The effort is appreciable and the gluten-free pizza's quality good, but I found two serious flaws I want to point out: 1. The pizza is cooked in the same oven as the gluten pizzas even if inside a pan; 2. When putting in the oven the pizza that had been prepared in a separate workshop, the pizza chef added basil that he had in the conventional line. Obviously both episodes expose the food to a potential contamination risk.

Near via dei Tribunali. Venue of undisputed fame, thanks also to the iconic owner. The gluten-free pizzas are excellent. The only flaw of the menu, the lack of vegan options (a flaw found in the vast majority of Italian pizzerias).
