indeed: NO USE OF THE OVEN WITH PROMISCUITY... you're confirming what I've been saying from the start; you do have the double oven and you have to use it if you also want to make gluten-free pizzas...

ADDITIONAL RULES FOR PIZZERIAS - SEPARATE AND UNCONTAMINATED WORK AREA: it's necessary to create a workshop totally separate from the other work spaces, or dedicate a work area totally separate from where you work with foods containing gluten. Failing that it's recommended to thoroughly and preventively sanitize the work surface.- DEDICATED EQUIPMENT: the machines, the equipment, the accessory products (aluminum pan) and the ingredients needed to make gluten-free pizza must be absolutely distinct and separate (covered or locked in a cabinet) to guarantee they're not contaminated.- NO USE OF THE OVEN WITH PROMISCUITY (PREFER A DOUBLE OVEN): this solution allows you to not interrupt the production of pizzas with gluten and to not cause long waits, besides guaranteeing no contamination.- USE OF PANS WITH RAISED EDGES: in the event of a single oven you'll need to pause cooking pizzas with gluten, not put the gluten-free pizza directly on the oven floor, but isolate it using pans with raised edges; also avoid risky moves like passing the floured peel over a gluten-free pizza.- DEDICATED TOPPING INGREDIENTS: don't use the same toppings used for pizzas with gluten, which have been touched with floured hands or spoons (sauce, mozzarella, oregano, various toppings, etc...).- USE MOZZARELLA FOR TOPPING: besides mozzarella you can use industrial melted cheeses as long as they're listed in the AIC Food Guide.

Mr clemente, you're not up to date on the guide, if you were part of the association you'd know very well that we're monitored by the association, precisely to give our customers a safe product.

aic requires a second oven period The things you say are precautions a person can have at home and not a restaurateur listed in the aic guide in fact you do have the second oven but you don't use it... who knows why!

Alfredo criticism helps you grow, but there are also those who do it out of envy, my kids only want your gluten-free pizza, kids are the mouth of truth, keep it up greetings to all your staff

To Mr clemente even though we make gluten-free pizza in the same oven we use every possible precaution, the pizza cooks in its own container without touching the floor as required by the association's manual. Before making criticisms get informed first

they make the gluten free pizza in the same oven as the ones with gluten... o_O a word to the wise ;-)
