Mr. ERMANNO thank you for your clarification but what I wrote is what one of your waitresses told me, also because I ate outside and couldn't see the oven. I specified that I'm celiac but apparently the waitress was from another restaurant !!!!!

I'm replying to ELENA's comment, first of all my place was NOT removed from the AIC network because it didn't meet the standards. I removed myself because I didn't agree with some of the board's ideas and the way they operated!!!!!!!!!!! also the bread is BAKED IN A SPECIALLY DEDICATED SMALL OVEN, FOLLOWING ALL THE REGULATIONS!!!!! and not as Mrs. ELENA said. the mushrooms, unfortunately, at certain times we're forced to use canned ones. And if Mrs. ELENA felt unwell I'm sorry but she should have told me personally or by phone so that we could have understood if we did something wrong and improve accordingly. anyway in 20 years of cooking, pastry-making and pizza-making for celiacs, this is the first time I've received a complaint

Removed from the AIC network because it didn't meet the standards. One example: the mushrooms are canned and the gluten-free bread is delicious but baked in the oven where the "regular" bread is baked. I found out after feeling terrible. A shame
