The Carbonara Festival brings the best of Roman cuisine to Trento: from Friday 16 to Sunday 18 October, Piazza Fiera hosts 35 cooks coming straight from Rome. Admission is free and food service runs non-stop, at lunch and dinner. On the menu are the great traditional pasta dishes (carbonara, cacio e pepe, amatriciana), fried specialities such as Jewish-style artichoke, courgette flowers, supplì and salt cod fillets, and Roman main courses: oxtail stew, meatballs in sauce, grilled lamb chops, Roman-style tripe, porchetta from Ariccia, mixed grill and more. The offer is completed by Roman pinsa and puccia, doughnuts, ciambelle and maritozzi with cream, plus beer, cocktails and wine from the Castelli Romani. Vegan and vegetarian options are also available. For people with coeliac disease there is a separate kitchen on wheels dedicated exclusively to gluten-free food, serving the three traditional pasta dishes, fried specialities, the sandwich with Castelli PGI porchetta and the desserts of the day. Entertainment: 90s DJ set on Friday from 8:30 pm to 11 pm; Roman folk songs and live Italian music with artists from Rome on Saturday from 8:30 pm to 10:30 pm and on Sunday from 1 pm to 3 pm. No booking needed: tables and benches are available on a first-come basis, and all dishes can also be taken away at no extra cost. Dogs are welcome.
